Saragolla Lucana (Triticum Turgidum Durum) is the Lucanian durum wheat par excellence, it is a very ancient cereal and is considered one of the progenitors of more modern durum wheats.
It has Middle Eastern origins linked to the "Khorasan" wheat variety with extraordinary nutritional properties, introduced to Italy in 400 AD by Proto-Bulgarian populations from Egypt; this variety subsequently began to be cultivated in the south and on the islands.
A wheat with a bristle ear, with black awns at the base and yellow awns toward the tip, Saragolla is highly resistant to fungal diseases, ensuring a consistent and high yield. With a long, flexible stem (the plant reaches a height of 140-160 cm), the ears typically contain 2-3 dark-colored seeds that are larger than those of other durum wheat varieties, slightly elongated. It has a more intense yellow color than Senatore Cappelli and a sweeter flavor. The grain appears more oblong than all other wheats, and is also 40-50% larger in size.
Its yellow grains yield a deep yellow flour with significant organoleptic characteristics and a high protein content. Furthermore, its natural gluten makes it more digestible than more common durum wheat.
Like all other ancient grains, Khorasan has a high mineral content.
According to some legends, Khorasan wheat is the grain that Noah brought with him on his ark , then called "camel's tooth" or "prophet's wheat," a grain from another era. It is said, after all, that Khorasan or Saragolla Lucana was found in an Egyptian sarcophagus , which is why it is also called "Pharaoh's Wheat" or "Ancient Egypt's Wheat."
