Cappelli is a durum wheat that boasts a good quantity of proteins (12-15%) , but its main characteristic is that it is richer in polyphenols and flavonols (including coumarins , phenolic acids , anthocyanins , flavones , isoflavones , proanthocyanidins , stilbenes and lignans) compared to modern varieties , which are associated with numerous health benefits , thanks to their anti-tumor , anti-inflammatory , antioxidant and antiviral properties.
Cappelli durum wheat contains two free phenolic compounds that characterize it , vanillin and pinosylvin; it also contains inoquine , which is found only in ancient wheat varieties, and two derivatives of pinoresorcinol which are lignans with phytoestrogenic and antitumor properties.

Among the vitamins , those of group B are the most represented , while among the minerals there are zinc , potassium and magnesium.

Senatore Cappelli grains are particularly hard and allow you to make a pasta that holds up particularly well during cooking, remaining al dente.

Replacing modern wheat pasta with 70 g/day of Cappelli durum wheat pasta for 10 weeks reduced total cholesterol and improved some blood parameters (e.g., blood viscosity). Dietary intake of Cappelli durum wheat pasta appears to be followed by favorable changes in markers of atherosclerosis , such as lipid parameters and hemorrheological variables.
Despite the high presence of gliadin , Cappelli wheat is a digestible grain even for those suffering from gluten sensitivity , other than celiac disease , as in a double-blind study , the replacement of modern wheat with this variety significantly reduced symptoms such as flatulence , intestinal disorders and eczema in patients , demonstrating a lower immunogenic potential .

 

Senatore Cappelli durum wheat is an ancient variety of durum wheat grown mainly in Southern Italy . It is a hard wheat, with typical black awns, and can only be grown organically because fertilizers and herbicides would cause it to bend and break.
The history of Senatore Cappelli durum wheat begins in the early 1900s when geneticist Nazareno Strampelli, starting with North African wheat, selected a hardy, highly resistant variety suited to southern soils, a plant up to 1.80 meters tall. In the early 1900s, demand for wheat increased, and new varieties began to be sought to improve yield and nutritional value. In this climate, Marquis Raffaele Cappelli , a senator and promoter of the agrarian reform that led to the distinction between durum and soft wheat, granted agronomist Nazareno Strampelli a plot of land near Foggia for experimental sowing. In 1915, Strampelli created the durum wheat he named Senatore Cappelli. Born from a cross between a Tunisian variety, Jenah Rhetifah , and other wheat varieties, Senatore Cappelli durum wheat immediately demonstrated its qualities, so much so that in the 1930s and 1940s it was called the "chosen breed" and for decades it remained the most widespread crop in Italy , especially in Basilicata and Puglia.

 

Cappelli wheat is considered the father of durum wheat, defined in the 1930s as a "chosen breed." It is a rustic durum wheat that prefers poor, clayey soil. Senatore Cappelli durum wheat, although just over 100 years old, is considered an ancient grain because it shares all its characteristics. Ancient grains have remained authentic and original; they have not undergone any human modification to increase their yield, just like Senatore Cappelli.
